Coronation Grape Muffins

Ingredients:

  • 2 ½ C all purpose flour
  • 1 C buttermilk
  • 1 C white sugar
  • 2 medium eggs (well beaten)
  • 2 ½ tsp baking powder
  • ½ C butter (melted)
  • ¼ tsp salt
  • 1 ½ C BC Coronation grapes

Preheat oven to 400 degrees F. (200C) Line muffin tins with paper cups. Combine flour, sugar, baking powder and salt. Make a well in the center. Add buttermilk, beaten egg and melted butter. Stir until just combined lightly fold in grapes. Bake 25 minutes or until golden on top. Cool in pan. Makes 1 dozen muffins.
