
Strawberry Rhubarb Bread
Ingredients:
- 1 C milk
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 ¾ C brown sugar
- 2/3 C grape seed oil
- ½ tsp salt
- 2 ½ C all purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 1 C chopped rhubarb
- ½ C chopped strawberries
- ½ C chopped walnuts
- ½ tsp cinnamon
- 1 tbsp melted butter
- 1 egg
Preheat oven to 325 degrees F. Lightly grease 2 9x5" loaf pans. In a small bowl, mix together milk, lemon juice and vanilla; let stand 10 minutes. In a large bowl, combine 1 ½ C brown sugar, oil and egg. Separately, combine the flour, salt and baking soda; stir into sugar mixture alternately with the milk mixture just until combined. Fold in rhubarb, strawberries and nuts. Pour batter into prepared loaf pans. In a small bowl, combine ¼ C brown sugar, cinnamon and butter. Sprinkle this mixture over the un-baked loaves. Bake in preheated oven for 40 minutes, until a toothpick inserted in the center of the loaf comes out clean.
