Baked Pears

Ingredients:

  • 3 ripe but firm pears, peeled, cored and quartered
  • 1/3 C pomegranate juice
  • 1/2 C dried cranberries
  • 1/4 C chopped walnuts
  • 1/4 C brown sugar
  • 2 tbsp ground cinnamon
  • 1/2 C rolled oats

Preparation:

Preheat oven to 350F.

Place quartered pears in a baking dish and drizzle with pomegranate juice. Sprinkle with cranberries and walnuts. Mix together rolled oats, brown sugar and cinnamon and lightly layer on top of pears. Bake for 20 minutes, or until pears are tender. Serve with vanilla ice cream or frozen vanilla yogurt.
