Lemony Green Peas in a Pod      
 

Ingredients:

½ C water
¼ tsp coarse salt
1 lemon cut into wedges
4 C whole english peas (in pod)
1 ½ tbsp Olive Oil
1 clove garlic ~ minced
freshly ground pepper
1 tbsp roughly chopped fresh mint leaves

Place ½ C water and the salt in a large skillet. Squeeze juice from the lemon wedges into the pan, adding the lemon wedges as well. Bring water to a simmer over high heat. Add th peas and cover ~ simmer until the peas are bright green. About 1 minute. Remove the lid, and simmer uncovered until water has evaporated. Add olive oil and garlic, salt & pepper to taste. Mix well to combine. Cook, stirring often until peas are cooked through (1 to 2 minutes) Remove from skillet, add mint, toss to combine and serve warm. Serves 4. Enjoy!
