Mushroom Leek Soup: with brie croutons      
 

Ingredients:

¼ C Butter
4 C chicken stock
3 Lg Leeks thinly sliced
1 C whipping cream
1 lb Mushrooms (ports)
2 tbsp cooking sherry
2 tbsp All purpose flour
4 Green onions sliced

Croutons:
12 ¼ “ slices baguette
2 Tbsp chopped fresh chives
½ lb Brie, rind removed, ¼ “ slices

Melt butter in a pan, add leeks and mushrooms, sauté 8 mins. Add flour and stir 1 minute. Gradually mix in stock. Bring to boil, stirring frequently. Reduce heat and simmer 5 minutes. Stir in Cream and Sherry, simmer 5 minutes. Season with Salt and Pepper. Stir in Green Onions. Croutons: preheat oven to 350 degrees, bake bread slices until golden, top with brie slices. Top your soup bowls with croutons, and broil until cheese is melted. Sprinkle with chives and serve. Enjoy!
