Old Fashioned Potato Salad      
 

Ingredients:

4 lbs new white potatoes
1 tbsp + 2 tsp salt
3 tbsp cider vinegar
3 lg eggs
1 C Mayonnaise
½ tsp celery seeds
1 tsp dry mustard
½ tsp black pepper
3 stalks celery, diced
1 red bell pepper, diced
1 med onion, diced
10 small pickles, diced
3 green onions, thinly sliced
1 tsp paprika
2 tbsp fresh parsley, chopped

Boil potatoes over high heat in salted water, until tender when pierced with a knife. Drain. Half or quarter potatoes as desired. Set aside. Hard boil eggs, and cool. Chop 2 eggs into ¼ inch dice. Slice the 3 rd egg into ¼ inch rounds, save for garnish. Combine diced egg, mayonnaise, celery seed, mustard, 2 tsp salt, and black pepper in a large bowl ~ whisk to combine. Add reserved potatoes to mayonnaise mixture. Add celery, red pepper, onion, pickle, green onions, and chopped parsley. Stir to combine. Chill for 30 minutes. Garnish with paprika and reserved hard boiled eggs. Serves 10.Enjoy!!
