Ingredients: 4 lbs new white potatoes Boil potatoes over high heat in salted water, until tender when pierced with a knife. Drain. Half or quarter potatoes as desired. Set aside. Hard boil eggs, and cool. Chop 2 eggs into ¼ inch dice. Slice the 3 rd egg into ¼ inch rounds, save for garnish. Combine diced egg, mayonnaise, celery seed, mustard, 2 tsp salt, and black pepper in a large bowl ~ whisk to combine. Add reserved potatoes to mayonnaise mixture. Add celery, red pepper, onion, pickle, green onions, and chopped parsley. Stir to combine. Chill for 30 minutes. Garnish with paprika and reserved hard boiled eggs. Serves 10.Enjoy!!
