Rapini & Garlic Over Pasta

Ingredients:

  • 4 cloves garlic, minced
  • 2 tbsp x-virgin olive oil
  • 1 tbsp raisins
  • 2 bunches rapini
  • 1 C chicken stock (pacific)
  • Your favorite fresh pasta ¼
  • C strong cheese of choice

Heat garlic in oil over medium heat in a large skillet until garlic sizzles in the oil. Remove 3 or 4 inches from the bottom of the Rapini stems and rinse the tops. Add Rapini to pan. Turn to coat with oil as the greens wilt. Add the chicken broth. Ad the raisins (this will balance the bitterness). Bring to a boil. Cover and reduce to low heat. Simmer 10 to 12 minutes. Serve over your favorite pasta topped with a sprinkling of strong cheese.
