
Very Veggie Spaghetti Sauce
Ingredients:
- 3 Tbsp Olive Oil
- 4 Cloves Garlic Chopped
- 2 Tbsp Lemon Peel
- ¾ C Zucchini Cubed
- 2 ½ C diced fresh roma tomatoes
- 1 Tsp Fresh Rosemary
- ¾ C Mushrooms, diced
- 1 Can Cortina Tomato Paste
- 1 Tsp Fresh Basil
- 1 Stalk Celery, chopped
- ¾ C Red Wine (not cooking)
- 1 Tsp Fresh Oregano
- ½ Red Pepper diced
- ½ C 1 C Pacific Chicken or Vegetable Broth
Sauté garlic in olive oil, add zucchini, mushrooms, celery and onion until lightly coloured. Add remaining ingredients, simmer all together, covered for 2 hours. Use this quick easy sauce as a delicious accompaniment to your favourite pasta dish. Serve with Caesar salad for the perfect Italian meal!
