Potato Leek Soup      
 

Ingredients:

6 c imagine chicken stock
1 tsp salt
6 leeks, chopped
1/4 tsp fresh ground pepper
½ c onion, chopped
1 c light cream
4 medium potatoes peeled & diced
fresh parsley for garnish

Boil all of the vegetables in a saucepan with the salt. Cover and simmer for 30 minutes. Run through a food processor or blender. Return to saucepan. Stir in cream and White Pepper and reheat (do not boil). Garnish with chopped fresh parsley and serve with fresh bread. Enjoy!
