Quiche Fantastic      
 

Ingredients:

1 lb russet potato, shredded
1 C bacon, cooked and diced
(optional)
2 tbsp all purpose flour
¼ C butter, melted
¼ C milk
salt & pepper to taste
5 eggs, lightly beaten
¼ C sautéed red pepper
1 ½ C cheddar, shredded
¼ C sautéed onion

Preheat oven to 375 degrees F. Lightly grease a 9-inch pie dish. Press potatoes into greased pie plate. Brush with melted butter, bake until golden (10-15 mins). Lightly sauté red pepper and onion. In a large bowl, stir together beaten eggs, milk, cheese, bacon, salt and pepper, and flour. Add sautéed pepper and onion. Pour egg mixture into baked crust. Bake in preheated oven until centre is set. About 20 minutes. The quiche will be browned on top and a knife inserted into the centre will come out clean. Enjoy!
