Ingredients:
2 cup dry small shaped pasta (such as mini farfalle or rotini)
½ yellow pepper chopped
½ red pepper chopped
¼ red onion chopped
100 gm sliced black olives
100 gm crumbled goat feta cheese
¼ cup red wine vinegar
¾ cup extra virgin olive oil
2 cloves garlic
2 tsp sea salt
Bring 8 cups of water to a boil and add pasta, cook until tender. While
pasta is cooking, chop peppers, onion and place in large mixing bowl. In a
blender or food processor combine wine vinegar, olive oil, garlic, and sea
salt. Puree until garlic is finely chopped and ingredients are well mixed.
Drain pasta and run under cold water until completely cooled. Add to mixing
bowl along with dressing, olives and cheese. Mix well and chill until
serving. Serves 6. Enjoy!
