Spiced Avocado Citrus Salad

Ingredients:

  • 2 large oranges
  • ½ C chopped red onion
  • 1 large grapefruit
  • 2 tbsp fresh green onions chopped
  • 1 tbsp curry powder
  • 1 tbsp grape seed oil
  • 1 avocado, diced
  • ground pepper to taste

Cut and peel oranges and grapefruit. Cut between membranes to release segments then chop them. Transfer to a bowl. Save juice in a saucepan. Whisk curry powder into juice. Boil until reduced to ¼ C, about 10 minutes. Cool. Add avocado, red onion and green onion to citrus segments. Drizzle with oil and 2 tbsp plus one tsp reduced juice (reserve remaining juice for another use). Season with salt and pepper. Toss gently; serve immediately. Makes about 2 ½ Cups.
