
Tomato and Bocconcini Salad
Ingredients:
- 450g bocconcini cheese (approx 1 pkg)
- 2 C cherry tomatoes, halved
- 3 tbsp fresh basil, sliced
- 1/4 C olive oil
- 1/4 C balsamic vinegar
- 2 tbsp honey
- 1 clove garlic, minced
Preparation:
1. Mix together olive oil, balsamic vinegar, honey, and garlic.
2. Pour this mixture over the bocconcini and let marinate for at least half an hour.
3. Add tomatoes and basil before serving
