Sesame Coleslaw      
 


Ingredients:

6 C grated green cabbage
3 C grated carrots
2 C fresh spinach Leaves, thinly sliced
½ C + 1tbsp rice vinegar
¼ C sesame Oil
¼ C white sugar
3 Tbsp minced fresh ginger
2 tbsp soy sauce
1 ½ tbsp toasted sesame seeds

Combine cabbage, carrots and spinach in a large bowl. Whisk vinegar, oil, sugar, ginger and soy sauce in a medium bowl until sugar dissolves. Season with salt and pepper. (Cabbage mixture and dressing can be made 1 day ahead ~ cover separately & chill) Toss cabbage mixture with dressing. Season Sprinkle with toasted sesame seeds and serve. Makes 8 servings. Enjoy !

  (Try kicking it up a bit with some red cabbage or kohlrabi!)
