Spinach Stuffed Tomatoes

Ingredients:

  • 4 medium firm tomatoes
  • 8 oz chopped spinach
  • 1/4 C pesto
  • 1/4 C feta cheese
  • 1/4 C sour cream
  • 1/2 C shredded mozzarella cheese
  • 1/3 C chopped onion
  • 2 tablespoons olive oil

Preparation:

In a skillet, saute onion in olive oil until tender. Stir in spinach; cover and cook for 4 minutes, until tender. Remove from heat and stir in sour cream, pesto, and feta cheese.

Cut off tops of tomatoes; scoop out centers, leaving the shell intact. Sprinkle tomato shells lightly with salt and fill with spinach mixture. Place tomatoes in a lightly greased baking dish; bake at 375 F for 20 minutes. Top each tomato with mozza cheese and continue baking until cheese is melted.
