Sesame Coleslaw

Ingredients:

  • 6 C grated green cabbage
  • 3 C grated carrots
  • 2 C fresh spinach Leaves, thinly sliced
  • ½ C + 1tbsp rice vinegar
  • ¼ C sesame Oil
  • ¼ C white sugar
  • 3 Tbsp minced fresh ginger
  • 2 tbsp soy sauce
  • 1 ½ tbsp toasted sesame seeds

Combine cabbage, carrots and spinach in a large bowl. Whisk vinegar, oil, sugar, ginger and soy sauce in a medium bowl until sugar dissolves. Season with salt and pepper. (Cabbage mixture and dressing can be made 1 day ahead ~ cover separately & chill) Toss cabbage mixture with dressing. Season Sprinkle with toasted sesame seeds and serve. Makes 8 servings.
