Potato Leek Soup

Ingredients:

  • ½ cup butter
  • 6 c imagine chicken stock
  • 1 tsp salt
  • 6 leeks, chopped
  • 1/4 tsp fresh ground pepper
  • ½ c onion, chopped
  • 1 c light cream
  • 4 medium potatoes peeled & diced
  • fresh parsley for garnish

Boil all of the vegetables in a saucepan with the salt. Cover and simmer for 30 minutes. Run through a food processor or blender. Return to saucepan. Stir in cream and White Pepper and reheat (do not boil). Garnish with chopped fresh parsley and serve with fresh bread.
