Spiced Avocado Citrus Salad      
 


Ingredients:

2 large oranges
½ C chopped red onion
1 large grapefruit
2 tbsp fresh green onions chopped
1 tbsp curry powder
1 tbsp grape seed oil
1 avocado, diced
ground pepper to taste

Cut and peel oranges and grapefruit. Cut between membranes to release segments then chop them. Transfer to a bowl. Save juice in a saucepan. Whisk curry powder into juice. Boil until reduced to ¼ C, about 10 minutes. Cool. Add avocado, red onion and green onion to citrus segments. Drizzle with oil and 2 tbsp plus one tsp reduced juice (reserve remaining juice for another use). Season with salt and pepper. Toss gently; serve immediately. Makes about 2 ½ Cups. Enjoy!
