Tropical Lemon Sorbet      
 


Ingredients:

1/3 C lemon zest
½ C pureed pineapple
¾ C strained fresh lemon juice
1 ½ C sugar
1 ½ C purified water

In a medium saucepan over medium heat combine sugar and water until sugar dissolves. Add lemon zest, lemon juice and pineapple . Stir until mixture comes to a boil. Maintain boil for 2 minutes. Remove from heat, cool & strain. Pour cooled mixture into a shallow container, cover and freeze ~ when semi solid, mash it up with a fork, and re-freeze again. When frozen, place in a food processor and blend until smooth, Cover & freeze until serving time. Garnish with lemon zest & pineapple wedge. Enjoy!
